Ahi Tuna Poke Bowl

  • 1 lb 1+ Ahi Tuna, Cubed
  • 4 tsp sriracha, divided
  • 3 tbsp soy sauce (prefer reduced sodium)
  • 2 tsp sesame oil
  • 4 tbsp mayo
  • 2 cups English cucumbers, chopped
  • 2 cups edamame, shelled
  • 1 mango, chopped
  • 4 scallions, sliced
  • 1 avocado, sliced
  • Black Sesame Seeds for garnish
  • 2 cups white rice, steamed
  1. Cube Ahi Tuna (or have us do it for you!).
  2. Combined the tuna with 2 tsp sriracha, soy sauce and sesame oil. Cover and chill.
  3. Among four bowls evenly divide the rice on bottom.
  4. Around the outer edges of the rice in each bowl, add cucumbers, edamame, mango and avocado.
  5. Place chilled tuna mixture in center of each bowl.
  6. Mix 2 tsp sriracha with the 4 tbps mayo and drizzle over each bowl.
  7. Sprinkle with scallions and sesame seeds.
There are so many variations to doing a delicious poke bowl! You can use Faroe Island Salmon, Sliced Radishes, Sliced Jalapeno, Pickled Ginger, Shredded Carrots, Pineapple, etc.
