- 1 lb 1+ Ahi Tuna, Cubed
- 4 tsp sriracha, divided
- 3 tbsp soy sauce (prefer reduced sodium)
- 2 tsp sesame oil
- 4 tbsp mayo
- 2 cups English cucumbers, chopped
- 2 cups edamame, shelled
- 1 mango, chopped
- 4 scallions, sliced
- 1 avocado, sliced
- Black Sesame Seeds for garnish
- 2 cups white rice, steamed
- Cube Ahi Tuna (or have us do it for you!).
- Combined the tuna with 2 tsp sriracha, soy sauce and sesame oil. Cover and chill.
- Among four bowls evenly divide the rice on bottom.
- Around the outer edges of the rice in each bowl, add cucumbers, edamame, mango and avocado.
- Place chilled tuna mixture in center of each bowl.
- Mix 2 tsp sriracha with the 4 tbps mayo and drizzle over each bowl.
- Sprinkle with scallions and sesame seeds.
There are so many variations to doing a delicious poke bowl! You can use Faroe Island Salmon, Sliced Radishes, Sliced Jalapeno, Pickled Ginger, Shredded Carrots, Pineapple, etc.
